ANALISIS BAHAHAZARD ANALYSIS CRITICAL CONTROL POINT IN THE FOOD STALL ON CAMPUSYA DAN PENGENDALIAN TITIK KRISIS DALAM PENYELENGGARAAN WARUNG MAKAN DI KAMPUS (ALTERNATIF PENCEGAHAN FOODBORNE DISEASES)
Abstract
Foodborne diseases are a public health problem, usually either infectious or toxic in nature, are caused by agents that enter the body through the ingestion of contaminated food. They include a range of diseases of chemical and biological origin, including cholera and diarrhoeal disease as well as a number of parasitic diseases. The purpose of this paper is description the application hazard analysis critical control point in the food stalls on campus is important considering the implementation of food related to health and is a preventive system to guarantee food safety by analyzing the possibility of hazard to the production system as well as monitoring of critical control points.
